On the first day of spring, I found myself making a bit pot of hot soup. Why? Well, mostly because my love for soup is enduring and season-less, but also because it was snowing. That’s right. More snow in Boston. At this point I oscillate between thinking “what’s another 2 inches?” and “are you kidding me? Really? The 108 inches wasn’t enough?”. Luckily I can’t be mad when soup is involved so my attitude towards the snow was closer to the former….

I think it’s safe to say that the one thing we can all agree on in regards to our health is that we should be eating more vegetables. Even the paleo and vegan people, seemingly on two opposite sides of the diet spectrum, share this thought. Americans’ diets are woefully low in vegetables, which means we’re woefully low in vitamins, minerals, phytochemicals, and fiber. It also likely means are diets are much too high in foods with a less desirable nutrient profile.
So if we all know we should be eating more vegetables, why aren’t we? Well, that’s a philosophical question I’m not equipped to answer, but no doubt the bridge between “knowing” and “doing” is a complex one. But what may help are some tips for fast, easy recipes and tips to make the process of eating vegetables a bit more enjoyable….
