It has been a while since I’ve done a WIAW (What I Ate Wednesday). Typically these posts are what I ate Tuesday and just posted on Wednesday, but this is actually WIAW. Yesterday was an atypical work day for me. I had the morning to myself and then drove 60 miles to teach a research intervention. I teach the nutrition portion of a weight-loss intervention for teenagers with mental disabilities. It’s a fun change from my typical work and great experience!
Breakfast 8:00 AM
Yesterday started the same as every morning. You would think I’d be eating a different breakfast after all the time that has passed between WIAWs, but I’m not. And I won’t. Because this is my favorite.
Plain Greek yogurt with strawberries, cacao nibs, and cinnamon; cinnamon-raisin sprouted bread with sunflower seed butter and 1/2 banana; coconut chai green tea
My morning was spent catching up on life including emails, laundry, grocery shopping, doing a kettle bell workout ( I can barely walk), and enjoying some sun on my balcony. And by balcony I mean my wide, south facing fire escape. City living.
Lunch 12:15 PM
I typically have a big spinach salad with a variety of toppings and sides for lunch. I got my veggies in a different way with this lunch!
Whole Foods vegetable summer rolls with a Bragg’s liquid aminos/sriracha sauce; Ezekiel toast topped with guacamole and hard-boiled egg; carrots with guacamole
Bragg’s Liquid Aminos is a great sauce, tastes exactly like soy sauce with about 1/10th the sodium content. I always keep individual pouches of guacamole in the freezer for a quick addition of some healthy fats. They defrost quickly and are a nice addition to sandwiches, salads, or dips.
I ate an apple in the car on the way to work (don’t worry-my car was stopped at a red light to take the picture Mom!), followed by….
…these homemade cinnamon-sugar whole grain pita chips that I made for the class. We dipped them in applesauce as the entire class was about healthy snacking and the importance of eating more than one food group at a snack. You can multiple the amount of pita chips I ate throughout the class probably by 7 🙂
Dinner 6:15 PM
Marinated tempeh strips with green beans and baked sweet potato slices
Love this tempeh recipe. Luckily I had baked the tempeh and sweet potato a few days ago so I was able to pull dinner together easily. Thank goodness, because after fighting rush hour traffic AND crazy Red Sox fans (perk/downside of my apartment location), I was ready for a quick dinner!
How cool are these M&M’s?! I got personalized M&M’s for my sister’s bachelorette shower with their initials, wedding date, and in their colors-or as close as M&Ms can get to gold, midnight blue and blush. Despite the fact that these taste exactly like normal M&Ms, I am much more intrigued by them. I have little 1 ounce bags that are the perfect amount to eat with some popcorn for a sweet & salty snack.
